More often than not, "healthy foods" have always been thought of as bland, bad tasting and unappetizing, that people who want to eat healthy get discouraged.
The Fabulously Healthy Company aims to offer healthy products that are healthy and good tasting as well, using the usual available ingredients in the market. Two are the recipes developed using the available fruits in the market today.
They are the following:
1. STRAWBERRY HEALTHY
Ingredients: SALAD
· 200g strawberry, diced
· 4 pcs slice peach in syrup, diced
· 1pc banana lakatan, diced
· 2tbsp white sugar
· ¼ cup walnut, roasted and chopped
· 225g-1 box cream cheese, softened
· 2 tbsp whipping cream
· 2 tbsp lemon juice
· 1 tsp ground ginger
PROCEDURES:
1. Combine all fruits and nuts in a bowl, sprinkle the sugar on top and set aside.
2. In another bowl, mix cream cheese and whipping cream whisk with wire whisk until soft and creamy add lemon juice and ground ginger mix well.
3. Add the mix fruit into the cream mixture, mix using spatula until well combined. Set aside or freeze for at least 1-2 hours.
STRAWBERRY VINAIGRETTE
· 100g strawberry chopped and puree
· 2 tbsp white sugar
· 1 tbsp red wine vinegar
· 2 tbsp extra virgin olive oil
· Salt and pepper to taste or pinch each
PROCEDURE:
1. In a bowl combine strawberry puree, sugar and red wine vinegar, mix using wire whisk while whisking add the olive oil mix until creamy season with salt and pepper.
2. Pour dressing into the squeeze bottle, set aside
ASSEMBLE:
· Salad greens
· Tamato slice
· Cucumber slice
· Strawberry for garnish
1. Drizzle strawberry vinaigrette onto the plate, arrange salad greens, cucumber and tomato,
2. Scoop SALAD (using spoon) onto the arranged vegetables and garnish with strawberry. Serve you can drizzle more vinaigrette if desired.
2. MANGO APPERITIVO
INGREDIENTS:
MANGO SALSA
· ½ cup mango, cubes
· 2 tbsp red onion, chopped
· 1 ½ tbsp coriander, chopped
· 1-pc 50-70g tomato, seeded and cube
· 1 ½ tbsp lemon juice
· 1 tsp sugar
· Salt and pepper pinch each
PROCEDURE:
Combine all ingredients in a bowl. Mix well, set aside or chill
ASSEMBLE
· Ostia cookies
· Greek yogurt
On the plate: Ostia cookies
Tsp of Greek yogurt
Mango salsa
GARNISH: Slice of lemon and coriander leaves
NOTE: Ostia Cookies is made of
Butter, egg, vanilla extract, sugar and ostia trimmings
